Perfect for a quick dinner or meal prep, this bowl is customizable with your favorite toppings like lettuce,  salsa, or shredded cheese. Here’s how to make it! 🍽️

For the Ground Beef:

  • 10oz 96% lean ground beef
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp chili powder
  • ¼ tsp red pepper flakes (adjust to taste)

For the Cilantro Lime Rice:

  • ½ cup (90g) rice
  • ½ tbsp (7.5mL) olive oil
  • ½ tbsp (8g) minced garlic
  • 1 cup (240mL) water
  • ¼ tsp salt
  • 1-2 tbsp (15-30mL) lime juice
  • 2 tbsp (8g) chopped fresh cilantro

1. Make the Ground Beef:

  • In a skillet over medium heat, cook the ground beef, breaking it up as it cooks.
  • Season with salt, pepper, paprika, garlic powder, onion powder, chili powder, and red pepper flakes. Adjust spices to taste.

2. Prepare the Cilantro Lime Rice:

  • Rinse the rice thoroughly under cold water and set aside.
  • In a medium pot, heat olive oil and minced garlic until fragrant.
  • Add the rinsed rice and stir until the grains are dry and lightly toasted.
  • Pour in water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and let cook until the water is absorbed (about 15-20 minutes).
  • Remove from heat and let steam for 5-10 minutes. Fluff with a fork, then stir in lime juice and fresh cilantro.

3. Assemble Your Bowl:

  • Start with a base of cilantro lime rice, layer on the seasoned ground beef, and top with your favorite taco toppings like lettuce, diced tomatoes, shredded cheese, guacamole, or salsa.
