Feel free to double to serve more people!

  • 120g (1/2 cup) day-old cooked rice
  • 90 grams (about four slices) lite spam
  • 1/2 cup frozen peas and carrots
  • 1/2 onion
  • 1 large egg
  • 1/2 tbsp minced garlic
  • 2-4 tbsp Low sodium soy sauce
  • 1 tbsp sesame oil
  • Salt and pepper to taste
  1. Prep the rice: Start with day-old rice for the best texture. If you’re cooking it fresh, spread it on a baking sheet and chill it for a few hours.
  2. Cook the base: Heat a skillet with cooking spray. Add diced minced garlic, diced onions, spam, and frozen peas and carrots. Sauté until the onions are translucent and the spam is slightly browned.
  3. Add the egg: Crack an egg into the skillet, scrambling it into the cooked veggies and spam.
  4. Combine with rice: Toss in the chilled rice and mix thoroughly.
  5. Season to perfection: Add salt, pepper, lite soy sauce (to taste), and sesame oil. Stir everything until well combined. Taste and adjust seasoning as needed.
  6. Garnish and serve: Plate the fried rice and garnish with parsley or sesame seeds.

For added protein and volume, serve alongside honey shrimp or steamed broccoli. Enjoy!
