Ingredients:
- ½ tablespoon extra virgin olive oil
- 1 tbsp of minced garlic
- 2 cups (60 g) leafy greens (spinach or bok choy)
- 2 cups (480 ml) low sodium vegetable broth
- 2-4 tbsp of low sodium soy sauce
- 1/2 tbsp of minced ginger
- 1-2 tablespoons (or to taste) of sriracha
- 1 medium onion
- 6-8 pieces Bibigo pork dumplings
- (Optional) 6-8 pieces of shrimp
- 2 servings of Maruchen ramen noodles (just need the noodles and not the flavor packet!)
Here’s how to make it:
- Heat the olive oil in a pan over medium heat. Add the minced garlic and cook until fragrant.
- Toss in the leafy greens and sauté until they start to soften.
- Pour in the vegetable broth and bring to a gentle simmer.
- Stir in the soy sauce, ginger, and sriracha. Adjust the seasoning based on your spice preference.
- Add the sliced onion, dumplings, and shrimp (if using). Cook until the onions are soft and the dumplings are heated through.
- Add the ramen noodles, letting them cook in the broth until tender. If needed, add more broth or water to reach your desired soup consistency.
