One of my favorite go-to recipes during the cold season is my take on Korean Spicy Beef Soup (Yukgaejang). It’s filling, spicy, and perfect for chilly days. The combination of tender beef, spicy kimchi, and a rich broth will help make your feel extra warm and cozy. 🍽️
Ingredients:
- 1 tbsp minced garlic
- 1 small zucchini, thinly sliced
- 1 small onion
- 1/2 cup kimchi, chopped
- 8 oz thinly sliced bulgogi beef or your favorite steak
- 2 tbsp gochujang (Korean chili paste)
- 1 tbsp gochugaru (Korean chili flakes)
- 4 tbsp soy sauce
- 2 cups beef broth (480ml)
- 1/2 cup water (120ml)
- 1/2 onion, thinly sliced (about 75g)
- 3-6 large dumplings (optional)
- 1/2 cup potato starch noodles or ramen (about 60g)
- Green onions for garnish
Here’s how to make it:
- In a large pot, sauté the minced garlic, zucchini, kimchi, and thinly sliced bulgogi beef (or your steak of choice). Cook until the beef starts to brown and the veggies soften.
- Add in the gochujang, gochugaru flakes, and soy sauce. Stir to coat the ingredients evenly in the spices.
- Pour in the beef broth and water. Bring everything to a boil over medium-high heat.
- Once the soup starts boiling, add in the onions. Taste and adjust the seasonings with additional soy sauce or chili flakes as needed. If it’s too spicy, add a little more water!
- In the last 7 minutes, toss in your dumplings and noodles. Allow them to cook through.
- Garnish the soup with fresh green onions and serve hot!
