Have it with steamed rice and frozen dumplings or egg rolls, and you’ve got a perfect “Panda Express” meal. 🍽️
Ingredients
For the Shrimp Batter:
- 4-6 tbsp cornstarch (adjust for consistency)
- 2 tbsp cup all-purpose flour
- 1 tbsp minced garlic
- 1/4 cup water (adjust for consistency)
- 1 bag large or jumbo shrimp, peeled and deveined
For the Sauce:
- 1/2 cup honey
- 1/4 cup mayonnaise or Miracle Whip
- 1/2 tbsp soy sauce
For the Walnut Topping:
- 2 tbsp unsalted butter
- 1/4 cup walnuts walnuts
- 1-2 tbsp brown sugar
Here’s how to make it:
- Prepare the Batter: In a bowl, combine cornstarch, flour, minced garlic, and water. Mix until the batter has a slightly thick consistency. If needed, add more water! Coat the shrimp evenly in the batter.
- Make the Sauce: Mix together honey, mayonnaise, and soy sauce. Adjust with more mayonnaise if the flavor is too sweet.
- Fry the Shrimp: Heat cooking oil in a deep pan or fryer. Fry the shrimp until golden brown and crispy. For extra crunch, double fry by letting the shrimp rest briefly and frying them again.
- Cook the Walnuts: In a heated saucepan, melt butter and add walnuts and brown sugar. Stir until the sugar dissolves and the walnuts are slightly caramelized. Be careful not to burn them!
- Combine Everything: Add the fried shrimp to the saucepan with the walnuts. Pour the sauce over and toss until the shrimp are evenly coated.
Serve hot with steamed rice and your favorite sides and enjoy!
