I LOVE chipotle, but sometimes my wallet doesn’t. 😭 This is why I started to make my own chicken bowls at home, and they have become one of my favorite meals to make!

Made with juicy chicken thighs (or chicken breasts if that’s your choice) and my favorite toppings, this chicken bowl hits my Chipotle cravings while still helping me maintain my goals.

  • 12oz boneless, skinless chicken thighs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tbsp olive oil

For the Veggies

  • 1 large bell pepper
  • 1/2 large onion

For the Cilantro Lime Rice

  • 90g (½ cup) white rice
  • 240 ml (1 cup) water
  • 1/2 tbsp olive oil
  • 1 tbsp minced garlic
  • 2-3 tbsp fresh cilantro, chopped
  • 1-2 tbsp lime juice
  • 1 tsp salt

For Toppings

  • ¼ cup (28g) shredded low-moisture
  • 2 tbsp (30g) low-fat sour cream
  • 1/4 cup shredded lettuce
  • 1/4 cup (120g) pico de gallo
  1. Prepare the Chicken: Wash and pat dry the chicken. Season with salt, pepper, paprika, garlic powder, onion powder, chili powder, and cumin.
  2. Cook the Veggies: After the chicken is done, remove and, in the same skillet, add sliced bell peppers and onions. Cook until tender and lightly charred, about 5-7 minutes.
  3. Make Cilantro Lime Rice: Rinse the rice thoroughly under cold water. Next, heat olive oil and minced garlic in a pot over medium heat. Once fragrant, add the rinsed rice and stir until lightly browned.
  4. Assemble Your Bowl: Layer cilantro lime rice, chicken, and your favorite toppings like cheese, sour cream, lettuce, and pico de gallo.
