This slightly sweet and spicy gochujang pork belly stir fry is full of flavor and super easy to make! The pork belly gets tender and juicy, mixed with a sweet and spicy Korean sauce, and stir-fried with fresh veggies. Serve it up with rice, dumplings, or even my ginger chicken egg rolls for a yummy Korean-inspired meal! 🍽️
Ingredients (1 Serving)
For the pork belly:
- 5 slices thin pork belly (about 150g)
- 1 onion, thinly sliced
- 1 green onion, sliced
- 1 cup spinach (30g)
- 1 tbsp unseasoned meat tenderizer
For the sauce:
- 1 ½ tbsp (30g) gochujang (Korean red pepper paste)
- 2 tbsp (30ml) lite soy sauce
- 1 tbsp (10g) minced garlic
- 1 tbsp (12g) sugar
- 1 tbsp (15ml) sesame oil
- 1 tbsp (15ml) rice vinegar
- ½ tbsp (7ml) water
- Optional: ½ tbsp extra sesame oil for finishing, sesame seeds for garnish

How to Make It:
- Prep the pork belly: Wash the pork belly and place it in a pot of water with 1 tbsp unseasoned meat tenderizer. Boil for about 1 hour, or until the meat is soft and tender.

- Prepare the veggies: Thinly slice the onion and green onion. Wash the spinach and set it aside.
- Make the sauce: In a small bowl, mix together the gochujang, soy sauce, minced garlic, sesame oil, rice vinegar, sugar, and water. If you have sesame seeds, feel free to add them in!

- Cook the meat & veggies: Once the pork belly is tender, remove it from the water, slice it into bite-sized pieces, and add it to a heated skillet. Toss in the onions.

- Add the sauce & stir fry: Once the onions are softened, add the sauce and green onions. If you like spinach, add in the spinach as well! Stir fry everything together for about 5-8 minutes. If you like extra sesame oil like me, drizzle in an additional ½ tbsp after cooking for extra flavor.


Serve & enjoy! Pair with steamed rice and dumplings for a complete meal.
