Here’s how to make it:
- Prep the chicken: Wash and cut chicken into bite-sized pieces. In a bowl, combine the chicken, garlic, egg white, soy sauce, cornstarch, flour, and water. Mix well to form a light batter.

- Chop veggies: Dice onion and red bell pepper and set aside.

- Fry the chicken: Heat oil in a skillet over medium heat. Working in batches, fry the chicken pieces until golden. For extra crispiness, I like to use the double fry method (let the chicken rest after the first fry, then fry again briefly).

- Sauté the veggies: In a separate non-stick pan, lightly spray with oil and cook onions and peppers until softened.

- Combine & sauce: Add the crispy chicken to the veggies, cook together for 5–10 minutes. Add sweet chili sauce and stir well to coat everything. Let it simmer for another 5 minutes so the sauce thickens.

- Garnish & serve: Sprinkle with sesame seeds if you’d like and serve hot over rice or with a side of steamed veggies!
