This garlic soy beef and mushroom bowl is one of my favorite quick meals to make when I don’t feel like doing too much, but still want something good. It’s super simple—just some ground beef, veggies, rice, and a sauce that brings everything together. I usually top mine with an egg and green onions, and it hits every time.
If you need a weeknight meal that’s easy, filling, and full of flavor—this is it! 🍽️
Ingredients (2 servings)
- 12oz 93% lean ground beef
- 3 1/2 tbsp soy sauce
- 1 tbsp minced garlic
- 1 tbsp sugar
- 109g mushrooms
- ½ cup spinach
- ½ red onion
- 100g rice
To garnish
- green onion
- 1 large egg

Here’s how to make it:
- Prep the veggies: Dice the onions, spinach, and mushrooms.

- Cook the rice: Cook 100g (½ cup) of rice according to package instructions. Set aside once done.
- Make the sauce: In a small bowl, stir together soy sauce, minced garlic, and sugar until the sugar dissolves.

- Cook the beef: Spray a skillet with nonstick spray and heat on medium-high. Add ground beef and cook until it begins to brown. Add in mushrooms, onions, and spinach. Sauté until the veggies are soft and beef is fully cooked.



- Combine: Pour the soy garlic sauce over the beef and veggie mix. Stir well and let everything cook together for 5 more minutes.

- Plate and serve: Place the rice into a bowl, top with the beef and veggie mixture. Add a fried or soft-boiled egg on top and garnish with sliced green onions.
