These lean ground beef tacos are perfect for Taco Tuesdays or whenever you’re craving tacos! Loaded with protein due to the lean ground beef and high fiber thanks to the tortillas, this is the perfect way to indulge in delicious tacos while still staying on track with any goals you have. Have these for dinner or meal prep for the week. 🍽️
Ingredients (4 tacos as a servings):
- 13oz 96% lean ground beef
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tbsp crushed pepper flakes, ground cumin, garlic powder, chili powder, paprika, onion powder (or just use taco seasoning packet)
- 1-2 tbsp water
- 1 green pepper
- 1/2 red onion
- 4 low carb tortillas (I like mission carb balance)
- 2 tbsp pico de gallo
- 4 tbsp light sour cream
- 84g shredded mozzarella cheese
- Any other of your fav taco toppings!

Here’s how to make it:
- Prep veggies: Dice your green pepper and red onion.

- Mix the seasonings: In a small bowl, mix together the salt, pepper, garlic and onion powder, red pepper flakes, chili powder, paprika, and cumin. Or you can just use a taco seasoning packet.

- Cook the beef: In a nonstick skillet over medium heat, cook the ground beef, peppers, and onions until meat is nearly browned.
- Season: Add your spices (or taco seasoning) and 1–2 tbsp of water. Simmer for 2–3 minutes to keep the meat juicy.


- Assemble: Layer beef mixture, cheese, and your favorite toppings onto tortillas.
- Crisp tortillas (optional): Lightly brush each tortilla with olive oil and crisp in the skillet for 1–2 minutes per side.


- Top and serve: Add light sour cream, pico de gallo, or anything else you like.
