This Cajun shrimp gumbo is one of my favorite easy meals to throw together when I want something warm, filling, and full of flavor. It’s got tender shrimp, smoky sausage, veggies, and a yummy tomato based broth that brings everything together. You can serve it with rice, potatoes, or whatever you’ve got on hand. It all comes together in one pot! 🍽️
Ingredients (makes 1 serving)
- 6 oz large shrimp (peeled, deveined)
- 80g polska kielbasa
- 1 green pepper
- 1 red pepper
- 1 tbsp unsalted butter
- 1 tbsp flour
- 1 cup chicken broth
- 1/2 white onion
- 1/2 tbsp tomato paste
- 1/2 cup diced tomatoes
- 1/2 tbsp worcestershire sauce
- 1/2 tsp soy sauce
- ½ tbsp minced garlic
- ½ tsp oregano
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp thyme
- ½ tsp cajun seasoning
- ½ tsp paprika
- Parsley to garnish

Here’s how to make it:
- Prep the shrimp: If frozen, defrost shrimp, peel, and devein if necessary. Lightly season with salt, pepper, cajun seasoning, and parsley.
- Slice and dice: Cut sausage into bite-size quarters. Dice onions and both peppers.
- Start cooking: In a large pot with nonstick spray, sauté the sausage, onions, peppers, and garlic over medium heat until the veggies are soft (about 5 minutes).
- Add tomatoes: Stir in tomato paste and diced tomatoes. Cook for another 5 minutes.
- Add shrimp: Stir in shrimp and cook until pink and cooked through.
- Make the roux: Push the mixture to the sides and melt butter in the center. Stir in the flour and coat everything in the roux.
- Simmer the broth: Pour in chicken broth. Bring to a simmer. Stir in Worcestershire sauce, soy sauce, and all remaining seasonings.
- Taste & serve: Adjust seasoning if needed. Serve hot with rice or potatoes. Garnish with parsley and enjoy!
