If you’re in the mood for pizza but still trying to stay on track with your goals, you’ve gotta try this pesto chicken tortilla pizza! It’s super easy and made with simple ingredients like grilled chicken, pesto, and mozzarella on a low-carb tortilla.

Whether you’re meal prepping or just want something quick and high in protein — this meal is perfect! 🍽️

  • 10oz boneless skinless chicken breast
  • 2 low carb tortillas (I like Mission carb balance)
  • 84g low moisture shredded mozzarella cheese
  • 2 tbsp pesto
  • 1/3 red onion
  • Salt, pepper, minced garlic, parsley, garlic powder, onion powder
  • Calories: 460 cal

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prep Chicken: Wash and trim your chicken breasts. Season lightly with salt, pepper, garlic powder, and onion powder.
  3. Cook Chicken: In a skillet sprayed with nonstick spray, cook chicken on medium heat until golden and cooked through (internal temp of 165°F). Shred with forks once mostly cooked.
