You can fill them with lean ground beef and rice, swap in quinoa or brown rice for extra fiber, or even go meatless with beans. This recipe makes enough filling for two rounds of stuffed peppers—you’ll have leftovers to enjoy the next day!🍽️

- 9oz 93% lean ground beef
- 3 bell peppers (colors of choice)
- 1/2 onion
- 4 tbsp tomato paste
- 1/2 cup diced tomatoes
- 1/2 cup cooked rice
- 1 tbsp minced garlic
- 1/2 tsp salt, pepper, oregano, thyme, rosemary
- 80g shredded mozzarella cheese

Here’s how to make it:
- Preheat oven to 350°F (175°C).
- Prep the veggies: Wash peppers, cut them in half evenly, and dice onions.
- Cook the rice: Cook 1/2 cup of rice according to package instructions (1:2 ratio of rice to water). Set aside.
- Blanch peppers: Boil peppers in water for 10 minutes, until softened.


- Cook onions & garlic: In a skillet with cooking spray, sauté onions and garlic until fragrant.
- Add tomatoes: Stir in diced tomatoes and cook for 5 minutes.
- Cook beef: Add ground beef and cook through. Stir in tomato paste, rice, and seasonings. You can add in a few tablespoons of water if you feel like the mixture needs it.
