Something about the upcoming fall season makes me want to bring out my slow cooker! This slow cooked chicken is juicy and tender, and well seasoned so it’s great for a weeknight dinner or you can easily use it for meal prep for the week! 🍽️

  • 13oz (2 thighs) bone-in, skin-on chicken thighs
  • 22oz (4 drumsticks) chicken drumsticks
  • 2 tsp salt
  • 2 tsp pepper
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp paprika
  • 2 tsp cayenne pepper
  • 2 tsp italian seasoning
  • 2 tsp minced garlic
  • ½ onion
  • 5 garlic cloves

  • Carbs: 5 g

Per piece of chicken:

  • 1 thigh: 250 cals, 17g protein, 0g carbs, 15g fat
  • 1 drumstick : 150 cals, 21g protein, 0g carbs, 7g fat
  1. Prep the chicken: Wash and trim chicken. Place the pieces flat in your slow cooker so they’re not stacked.
  2. Season generously: Sprinkle 1 tsp of each seasoning over one side of the chicken, flip, and season the other side with the remaining 1 tsp. (Optional: add an extra dash of each spice if you love bold flavor.) Add the minced garlic on top.

  1. Cook: Cover and cook on high for 4–5 hours, flipping the chicken every hour.
  2. Add aromatics: In the final hour of cooking, add sliced onion and whole garlic cloves.

  1. Serve & enjoy: Pair with mashed potatoes, rice, quinoa, or your favorite side dish.
