Mediterranean steak loaded potatoes

This recipe for Mediterranean steak loaded potatoes came together when I wanted something filling but not too heavy. I baked up some potatoes, cooked the steak with a few veggies, and then piled it all together with tzatziki and feta. It’s the kind of meal that feels comforting, but still fresh, and it’s easy enough to throw together on a weeknight! 🍽️

  • 10 oz beef stew meat
  • 4 small russet potatoes 
  • 2 tbsp Afia Spice Blends Set (Za’atar, Baharat & Shawarma)
  • ½ red onion
  • Cherry tomatoes
  • 2 tbsp crumbled feta cheese
  • 1 tbsp minced garlic
  • 1 tbsp olive oil 
  • 4 tbsp tzatziki sauce
  • Salt, pepper, unseasoned meat tenderizer 

Optional toppings:

  • Chopped lettuce
  • Sliced cucumber
  • Extra onions or beans

  1. Prep the steak: Wash, trim, and season steak with minced garlic, spice blend, salt, pepper, tenderizer, and ½ tbsp olive oil.

  1. Prep potatoes: Wash and poke fork holes into each potato.
  2. Bake potatoes: Bake at 375°F (190°C) for about 1 hour or until fork-tender.
  3. Prep veggies: Dice up onion and tomatoes. Set aside.

  1. Cook steak: Heat remaining ½ tbsp olive oil in a skillet. Add steak and cook until about halfway done. Cut into smaller pieces if needed.
  2. Add onions & tomatoes: Stir in onion and tomatoes. Cook until tender, adding 2 tbsp water if needed.

  1. Assemble: Split baked potatoes open. Add a spoonful of tzatziki, top with steak mixture, more tzatziki, and finish with feta.

  1. Optional toppings: Add lettuce, cucumber, or extra veggies for freshness.
