It’s about time I shared a breakfast recipe! Breakfast is hands down my favorite meal of the day, and this loaded breakfast bowl has been on repeat lately. It’s a cheesy egg white and potato scramble that’s high in protein, super filling, and perfect for meal prep or busy mornings on the go! 🍽️

  • 1/2 cup (or 130g)  liquid egg whites
  • 1 large egg
  • 2 strips bacon
  • 2 sausage links
  • 70g or 4 slices deli ham
  • 1 large (or 320g) russet potato
  • 1 green bell pepper
  • 1/2 onion
  • 1/2 tbsp olive oil
  • 1/4 cup (or 28g) reduced fat cheddar cheese
  • Salt, pepper, garlic powder, chili powder, parsley
  • Calories: 837 cals
  • Protein: 60g
  • Carbs: 75g
  • Fat: 36g
  1. Preheat oven: Set oven to 375°F (190°C).
  2. Prep potatoes: Dice the potato into small cubes. Toss with olive oil, salt, garlic powder, chili powder, and parsley. Bake for 25–30 minutes or until tender and golden.

  1. Cook meats: Cut bacon, sausage, and ham. In a skillet coated with cooking spray, cook bacon and sausage halfway through.
  2. Add veggies: Add diced pepper, onion, and ham to the skillet. Cook until vegetables are tender and meats are browned.

  1. Scramble eggs: Remove the meat mixture and cook your egg whites and whole egg in the same skillet. Once cooked, top with cheese and let it melt.

  1. Assemble: Layer the potatoes in a bowl, add meat and veggie mix, then top with cheesy eggs. Sprinkle with parsley or add hot sauce or ketchup for extra flavor!
