The weather is getting colder, which means it’s officially ramen season! This Spicy Chicken Ramen is perfect for those chilly nights when you’re craving something warm, cozy, and flavorful. Made with juicy chicken thighs, veggies, and a spicy broth, this recipe takes your usual pack of ramen to the next level! 🍽️
Ingredients (makes 2 servings):
For the chicken
- 6.5oz boneless skinless chicken thighs
- ½ tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp paprika
For the broth
- 1 cup chicken broth
- 1-2 cups water
- 1 tbsp minced garlic
- 4 tbsp lite soy sauce
- 1 tbsp gochujang
- ½ tbsp sesame oil
- 1 red pepper
- ½ onion
- Green onion
- 2 packs ramen noodles
Optional add ons:
- 6 mini chicken wontons
- Boiled egg

Here’s how to make it:
- Prep the chicken: Wash, trim, and season your chicken thighs with salt, pepper, paprika, garlic powder, and onion powder. Sear or pan-fry over medium heat until fully cooked, then slice.
- Prep the veggies: Slice the red pepper and onion. Chop green onion, keeping half for the broth and half for garnish.


- Sauté the veggies: In a pot lightly coated with cooking spray, sauté minced garlic, sliced pepper, and onion until soft and fragrant (about 3–4 minutes).
- Build the broth: Add chicken broth and 1 cup of water. Bring to a boil, then stir in gochujang and soy sauce. Adjust seasoning and water to taste — if you prefer more broth, add up to another cup. Add in half of the green onion.



- Add the noodles (and dumplings, if using): Once the broth is boiling, add the wontons if using. Let them cook for a few minutes, then add in the ramen noodles. Cook until tender.

- Garnish and serve: Add to bowl, drizzle with sesame oil, top with chicken, green onion, and a boiled egg. Serve and enjoy your cozy bowl of spicy comfort!
