Japchae is a traditional Korean stir-fried noodle dish made with potato starch noodles, colorful vegetables, and your choice of protein. It’s great for lunch, dinner, or meal prep. If you’re a noodle or stir fry lover, then this recipe is for you! You can make it with as much veggies as you like, your meat of choice, or even make it meatless. 🍽️

  • 4oz thin ribeye beef
  • 130g Asian starch noodles
  • 1 onion
  • 1 large zucchini
  • 2 bell peppers (colors of choice)
  • 2 cups spinach
  • 4 tbsp soy sauce 
  • 2 tbsp sesame oil
  • 1 tbsp minced garlic
  • Salt and paper to taste 
  • Cooking oil to cook veggies
  • (Optional) 2 tbsp sesame seeds to garnish
  • Calories: ~706

  • Carbs: ~49.7g
  • Fat: ~35.3g
  1. Prepare the Vegetables: Thinly slice your onions, peppers, and zucchini 
  1. Boil the Noodles: Boil potato starch noodles in a large pot according to the package instructions. Once cooked, drain and rinse under cold water. Use kitchen scissors to cut the noodles in half for easier handling.
  2. Cook the Vegetables: Heat oil in a skillet and stir-fry the vegetables one at a time until soft. Set each cooked vegetable aside in a large mixing bowl.
  3. Make the Meat: In the same skillet, add a little oil and cook the beef slices. Lightly season with salt and set aside with the vegetables.
  1. Combine and Serve: Add the cooked noodles to the bowl with the vegetables and beef. Add half of the soy sauce, sesame oil, and minced garlic. Mix everything thoroughly, taste, and adjust the seasoning with more soy sauce, sesame oil, or salt as needed.

Japchae can be enjoyed alone or you can have it with white rice and side dishes like dumplings for a heavier meal!
