Here’s how to make it:
- Preheat your oven to 375°F (190°C).
- Mash the bananas: In a large mixing bowl, mash the bananas until smooth.
- Mix the wet ingredients: Mix in the egg, vegetable oil, and vanilla extract, stirring until well combined.
- Add the dry ingredients: Add the flour, sugar, salt, and baking powder to the wet ingredients. Gently fold until combined – be careful not to overmix!
- Add the chips: Stir in the chocolate chips and peanut butter chips.
- Line muffin tins: Line muffin tin with liners and spoon the batter evenly into each cup.
- Bake: Bake for 15-20 minus or until the tops are lightly browned. To check for doneness, insert a knife or toothpick into the center – if it comes out clean, they’re ready!
- Allow to cool: Remove the muffins from the oven. Let them cool for a few minutes in the tin, then transfer to a wire rack.
💡 Pro Tip: If you’re a peanut butter lover like me, spread a little extra peanut butter on top while they’re warm!
Enjoy these delicious muffins with a cup of coffee or milk or as a dessert!
