Ingredients (1 serving)
- ½ cup (120g) cooked white rice (day-old for best results)
- ½ small onion, diced
- ½ tbsp (4g) minced garlic
- 2-3 slices (90g) lite spam, diced
- ¼ cup (60g) kimchi, chopped
- 1 tbsp (15g) kimchi juice
- 1 ½ tbsp (15g) gochujang (Korean chili paste)
- 2 tbsp (15ml) soy sauce
- 1 tbsp (15ml) sesame oil
- 1 fried egg (for topping)
- Green onions, chopped (for garnish)
- Cooking spray or 1 tsp oil

Here’s how to make it:
- Prepare the Rice: The best fried rice is made with day-old rice. Cook the rice the day before and refrigerate overnight for the perfect fried rice texture.
- Sauté Onion and Garlic: Heat a skillet over medium heat with cooking spray. Add diced onion and minced garlic, cooking until fragrant.
- Cook the Spam: Add the diced spam and cook until slightly crispy.
- Add Kimchi & Seasonings: Stir in kimchi and kimchi juice, then mix in gochujang and soy sauce.
- Fry the Rice: Add in the day-old rice, stirring well to combine. Cook for 2-3 minutes until heated through. Taste and adjust seasoning if needed. Add in the sesame oil.
- Serve: Plate the fried rice, top with a fried egg, and garnish with green onions.
