Pasta is one of my favorite foods, and lately I’ve been obsessed with this stuffed meatballs and penne combo. It’s officially my new go-to cozy dinner for nights when I don’t know what to cook but still want something filling and really yummy.
The best part? It’s made with 96% lean ground beef, mozzarella, and protein pasta so it’s high in protein if that’s what you’re looking for! 🍽️
Ingredients:
For the meatballs
- 16oz 96% lean ground beef
- 1 mozzarella string cheese
- 1 tbsp bread crumbs
- 1/2 tbsp yellow mustard
- 1 tbsp egg white or 1 whole egg
- Salt, pepper, & onion powder
- 1 tbsp minced garlic
- 1/2 tbsp lite soy sauce
For the pasta & sauce
- 70g protein penne
- 1/2 or whole zucchini (optional)
- 1/2 or whole bell pepper (optional)
- 1/2 red onion (optional)
- 1 cup pasta sauce
- Hot sauce
- Red pepper flakes
- Italian seasoning
- 1/2 tbsp BBQ sauce

Here’s how to make it:
- Prep the meatballs: In a bowl, combine ground beef, breadcrumbs, mustard, egg whites, garlic, soy sauce, Worcestershire, salt, and pepper. Mix well. Save a small portion of the beef for the sauce if you like a meat sauce.
- Prep the veggies: If using in your sauce, dice the zucchini, bell pepper, and onion. Set aside.
- Stuff the meatballs: Cut the string cheese into small pieces. Form meatballs around each piece. You should have 4 meatballs!
- Cook the pasta: Boil water and cook the penne until al dente (or your preference).
- Sauté the veggies: In a skillet sprayed with cooking spray, cook the diced zucchini, bell pepper, onion, and leftover ground beef (if using). Add pasta sauce and season with hot sauce, red pepper flakes, italian seasoning, and BBQ sauce (hear me out on the BBQ sauce 😂).
- Cook the meatballs: In a separate skillet, cook meatballs on medium-high heat, turning occasionally until browned on all sides. Add a splash of water, cover, and let steam to finish cooking through.
- Combine everything: Add the cooked pasta and meatballs to the sauce. Stir and let simmer for another 5 minutes.
- Serve: Plate, top with parmesan and parsley, and enjoy!
