Burger night got an upgrade! 🍔🌮
These crispy quesadilla burgers have all the best parts of a cheeseburger tucked inside a crispy tortilla. They’re one of my favorite reminders that balance doesn’t mean giving up the foods you love. It just means finding ways to enjoy them that leave you feeling good! If you love a juicy burger but want to switch things up, these crispy quesadilla burgers are such a fun dinner!
This recipe makes two quesadilla burgers, making it perfect for sharing or saving one for lunch the next day!. 🍽️
Ingredients (makes 2 servings)
For the burger patties
- 8.5 oz 93% lean ground beef
- 1 tsp yellow mustard
- 1 tsp lite soy sauce
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp onion powder
For the quesadillas
- 2 low carb tortillas (I used Mission Carb Balance)
- 2 slices provolone cheese
Toppings (customize your favorites!)
- Lettuce
- Sliced red onion
- Caramelized onion
- 4 slices bacon
- 2 tbsp burger sauce (I used Chick-fil-A Sauce)

Here’s how to make it:
1. Make the burger patties: In a bowl, combine the ground beef, mustard, soy sauce, salt, pepper, garlic powder, and onion powder. Mix until just combined, then form into two thin burger patties.
2. Prep the toppings: Slice the red onion, dice an onion for caramelizing, wash the lettuce, and have all of your toppings ready to go.
3. Cook the bacon: Cook the bacon until crispy. Remove from the skillet and set aside, leaving a little bacon grease in the pan for extra flavor.
4. Cook the burgers: Cook the patties over medium heat for about 4–5 minutes per side, or until cooked through. During the last minute of cooking, top each patty with a slice of provolone cheese and allow it to melt.
5. Caramelize the onions: While the burgers cook, sauté the diced onions until they’re soft, golden, and caramelized.
6. Assemble the quesadillas: Lay each tortilla flat and place csheese on over one half. Place one cheeseburger patty on top, then slice the patty in half so it fits neatly inside the folded tortilla. Add the bacon, caramelized onions, lettuce, red onion, and burger sauce before folding the tortilla over.
7. Toast until crispy: Return each folded quesadilla to the skillet and cook for 2–3 minutes per side, or until the tortilla is golden brown and the cheese is melted.
Slice in half and serve with your favorite fries or chips for the ultimate cozy burger night!

- ✨ Form the patties a little larger than your tortillas because they will shrink slightly as they cook.
- ✨ Slicing each burger patty in half before folding makes the quesadillas much easier to eat!
- ✨ Don’t skip cooking the burgers in a little bacon grease if you have it. It adds so much flavor. 😋
- ✨ Add pickles, jalapeños, tomatoes, or your favorite burger toppings to make them your own!
