That’s what I love most about this recipe: it’s totally customizable. You can switch up the sides, double the batch for meal prep, or keep it simple and serve it in a bowl for a quick weeknight dinner. 🍽️
Ingredients (2 servings):
For the meatballs:
- 255g (9 oz) 93% lean ground beef
- 1 tbsp (9g) minced garlic
- 1 large egg white or 1 whole egg
- 1/3 small onion, finely diced (about 40g)
- 1 tbsp (13g) olive oil (for cooking)
- 1 tbsp (7g) breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
Optional bowl add-ons:
- Tzatziki sauce
- Roasted vegetables (peppers, zucchini, cucumbers, etc.)
- Fries or roasted potatoes

Here’s how to make it:
- Prep the meatballs: In a large bowl, add the ground beef, minced garlic, diced onion, egg, breadcrumbs, and all seasonings. Combine until everything is evenly mixed, then roll into 6 small meatballs.


- Cook: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the meatballs and sear until browned on all sides. Add a splash of water to the pan, cover, and let steam for 4–6 minutes until fully cooked through.

- Assemble your bowl: Start with a generous spoonful of tzatziki, add the meatballs, your favorite roasted or raw veggies, and a handful of fries or roasted potatoes. Garnish with fresh parsley or lemon juice if you want an extra kick!
